You're not wrong, they are dead set mad. I have done a fair few laps around Queensland raceway, but the safety aspect between a track and a street circuit are worlds apart. No way In hell I would have the balls to ride that quick at Isle of Man and the like.

I have heard stories from people I know, sitting on 200km/h on there road bikes. See a cop car and just pull the throttle back.

The problem with sitting on 220km/h or more on a freeway is that the cars travelling in the same direction as you are approaching as fast as if they were coming from the other direction. They don't figure you're moving that quick, so they think nothing of moving out to overtake.
Whether or not this is from personal experience is not something I will confess to in writing and especially on the internet.
