You can still bleed a hydraulic clutch. It will do as its always done - refresh the fluid and remove any air in the system.
Clutch systems have been the same basic design since Jesus played halfback for Jerusalem. The design is still used because it's simple and it works. Just like belt driven water pump designs, oil filter designs....yes there are better ways out there, but why change if it does the job?
